I love meals that are quick and easy to get on the table and dirty as few pans as possible. I also love chicken parmesan, but I don’t love the calories that usually go with it. This recipe isn’t authentic Chicken Parmesan, there is no breading on the chicken, but it does have great flavor from the marinade. For a weeknight meal, I am happy to save on the extra calories. To make this recipe even easier, feel free to substitute your favorite jarred marinara sauce for the recipe I have listed below. Our local grocery has a basting oil that is delicious and is what I use for the marinade, but you could even…

Enchilada Casserole
If you follow me on Instagram you might have seen that my sisters were in town over the weekend. I loved having them here and when we weren’t shopping we were cooking and eating! Individual Meatloafs
After I graduated from college I got an apartment with a couple friends and I quickly discovered that I only knew how to cook for a crowd! One of my married friends who lived in the area definitely looked out for me during my first couple of years on my own. Tiffani was a couple of years older than I was and she let me come over for dinner often and always sent me home with leftovers. She gave me this recipe she cut out of a magazine that had a cooking for one section and I’ve now adapted it to feed four. Growing up I was pretty neutral to meatloaf. I would eat it when my mom served it, but…

But some nights you want something that is just as quick and easy, but a little bit fancier. Let me introduce you to this Easy Parmesan Alfredo Sauce that is both easy and fancy. With only four ingredients, plus salt and pepper, this Parmesan…
