Cheesy Corn Dip

Today’s recipe started with the need for a last-minute side dish for a family dinner and ended up as this cheesy goodness! 

Enjoy as an appetizer or side or add some to your tacos or burrito bowls to make them extra special.

The special ingredient really is the Trader Joe’s Everything But The Elote Seasoning Blend. Cheesy with just enough spice to be memorable. If you can’t get to a Trader Joe’s, first of all, I’m sorry, but check out the notes below for what I would recommend as a substitute.

Cheesy Corn Dip

Ingredients
  

  • 2 (12 ounce) bags frozen corn - thawed
  • 8 ounces cream cheese - room temperature
  • 2 cups shredded cheddar cheese - divided
  • 1 Tablespoon Trader Joe's Everything But The Elote Seasoning Blend

Instructions
 

  • Preheat oven to 400.
  • In a large bowl, combine the corn, cream cheese, 1 1/2 cups cheese, and the seasoning.
  • Transfer to a 9×9 baking dish and bake 20-25 minutes until hot and bubbly.

Notes

  • If you can’t find the Trader Joe’s seasoning, I’d try subbing it with your favorite taco/Mexican seasoning.
  • Leftovers reheat nicely in the microwave.
