• Oatmeal Snickerdoodle Cookies [Oatmadoodle Cookies]

Hi Friends! Do I have a treat for you today. A couple years ago Mr. Sam mentioned that I should try to make a new kind of cookie, an oatmeal cookie combined with a snickerdoodle and I should call it an Oatmadoodle. Fast forward to today and I finally have an Oatmadoodle Cookie recipe to share with you! Yay! Talking about these cookies today seems exceptionally appropriate since Saturday is Mr. Sam’s birthday! I’m baking him the Chocolate Chip Cookie Dough Cheesecake that I posted last year cause it’s his favorite. Fun fact: I’ve baked it for each of his birthdays since we’ve been married. As an adult, I don’t know if there…

  • Whole Wheat Mini Chocolate Chip Muffins

It’s been months since I’ve posted a new muffin recipe and that’s just not fair to you or to me. Today I have a new recipe for whole wheat muffins that are dotted with mini chocolate chips. Aren’t all muffins better with chocolate chips?     These muffins start with whole wheat flour and I love the slight nuttiness that it gives them. If you don’t want to use whole wheat flour, you can easily substitute it with all-purpose flour. I reduced the sugar to 2/3 cup, so these muffins are only slightly sweet, but adding the mini chocolate chips gives them just that extra little bit of sweetness. I…

  • Easy Saltine Cracker Toffee

Valentine’s day is just a couple days away. Do you have special plans? We usually celebrate with a low key dinner at home and I always make a special dessert (last year I made these chocolate lava cakes). I’m still working on our menu for this year, but I’m thinking pasta with chocolate for dessert, of course.     What’s more special than giving your valentine candy? It’s giving them candy that you made yourself! This Saltine Cracker Toffee is so simple, you don’t even need a candy thermometer.     You can make this Saltine Cracker Toffee with six ingredients and 20 minutes of hands-on time, before letting the…

  • Sheet Pan Garlic Butter Tilapia and Vegetables

Are sheet pan meals still a thing? Please, please say yes.     Not only does today’s meal qualify as a one pan meal, it is also a 30-minute meal! #score   We try to switch things up and eat fish for dinner every once in a while. But I don’t like fish that tastes fishy or that’s bland and dry. This Sheet Pan Garlic Butter Tilapia is not overly fishy, is full of flavor, and is definitely not dry.   You start with placing your thawed tilapia filets and frozen vegetables on a sheet pan, then you drizzle them with melted butter with minced garlic and grated parmesan.  …

  • Coffee & Dish #17

January has been a long month and I’ve missed you! How was your January? I headed back to the gym and tried to go to bed early…a lot. Like really early. And I’m not going to apologize about starting off 2018 rested and refreshed.   {ONE} Let’s start by talking about the Instant Pot. Do you have one? I got one on Black Friday and honestly, I was not sure about it at the beginning. But now I’m a couple recipes in and I’m hooked! It’s definitely going to become a regularly used part of my kitchen. Stay tuned for some Instant Pot recipes!     {TWO} Speaking of the…
