• Healthy Applesauce Oatmeal Muffins

Do you ever come across recipes that you had completely forgotten about? That’s what happened with this one. I found this recipe again last Saturday morning and it is just as delicious as I remembered. These Healthy Applesauce Oatmeal Muffins are simple, hearty and not overly sweet.     Using old-fashioned oats in these muffins gives them a hearty texture. While the applesauce and brown sugar give them just the right amount of flavor and keeps them moist.     These muffins freeze well and are perfect to pack in lunches. I’ve been enjoying them every day this week! What’s your favorite type of muffin?   Full of applesauce and oatmeal!

  • Sour Cream Coffee Cake

Growing up coffee cake was one of the breakfast foods my mom made all the time, probably because it could easily feed our large family. I remember many breakfasts sitting around the kitchen table with my family, eating coffee cake and talking.     Now, this isn’t the recipe I grew up eating, But this cake tastes even better the next day. Yep, you heard that right, it tastes even better the next day. So go ahead, bake it the night before and then sleep in. The sour cream keeps the cake moist and gives it a delicious flavor. I love baked goods that include sour cream!     Using melted butter in the topping creates little craters in…

  • Donut Muffins

We could all act surprised that I’m posting another muffin recipe, but let’s be honest, I’m muffin obsessed! I first made these muffins shortly after I got married and they have been a favorite ever since. I wish I could say that all of the recipes I’ve tried over the years have been this much of a success.   These muffins are moist and not overly sweet even with the cinnamon/sugar topping. The cinnamon and nutmeg in these muffins gives them just the right amount of flavor and reminds me of a homemade donut and that’s where they get their name, Donut Muffins.     Delicious even before the topping, but dipping these muffins in…

  • Refrigerator Bran Muffins

I think it’s safe to say that I have a slight muffin obsession. But honestly, can you have too many go to muffin recipes? I think not. Last year I went looking for a bran muffin recipe and once I discovered the inspiration for these I stopped looking. Not only are they delicious and healthier (applesauce replaces some of the butter), but the batter can be stored in the refrigerator for up to 14 days. Yep, you read that right. Once you make the batter you can let it sit in the refrigerator for up to 2 weeks and when you are ready to bake them  just give the batter a good stir before spooning into…

  • Cinnamon Toast

Here’s another recipe where you are probably thinking to yourself that you don’t need a recipe for toast. But if you usually toast your bread and then spread butter on it and sprinkle a cinnamon/sugar mix on top you probably enjoy it. But if you want to take it from enjoy to love then you need to make this recipe. The secret is in spreading the butter and cinnamon/sugar mixture on the bread before toasting which creates a delicious caramelized topping. Now the recipe calls for 6 slices of bread, but this is going to depend on the size of the slices. Any sliced loaf bread, white or whole wheat will…
