I know some people, like the man I am married to, like fall for football. And while football has definitely grown on me over the last few years, I might still get more excited about the food that goes with the game than the actual game itself. So today I’m sharing a recipe that is perfect for game day.
This recipe calls for shredded BBQ chicken. Now when I made these I had leftover Slow Cooker BBQ Chicken that I used. But you could use BBQ chicken you cooked on the grill and then shredded or shredded chicken from a rotisserie chicken that you covered in your favorite BBQ sauce. The flavor of the BBQ sauce is the main flavor of the nachos, so make sure you use one you love. The important thing to remember is that this recipe calls for cooked chicken.
I also gave you the recipe I used to make a creamy homemade cheese sauce, that is every bit as cheesy and creamy as the store-bought stuff, but without all of the crazy ingredients that you can’t pronounce. But if you don’t feel like making a homemade cheese sauce, just use your favorite store-bought cheese sauce.
This weekend when you are watching the game, pop these nachos in the oven and enjoy!
BBQ Chicken Nachos
Ingredients
Nachos:
- 2-4 cups tortilla chips
- 1 cup shredded BBQ chicken
- 1 cup shredded cheddar cheese
- Sour Cream
Cheese Sauce:
- 1 tablespoon unsalted butter
- 1 tablespoon flour
- ½ cup 1% milk
- Pinch of salt and pepper
- 1 cup shredded cheddar cheese
Instructions
Cheese Sauce:
- In a small saucepan over medium-low heat, melt the butter. Whisk in the flour and cook for 1-2 minutes or until it begins to bubble around the edges.
- Gradually whisk in the milk and allow the sauce to simmer until thickened. Stir in the salt and pepper. Add the cheese and stir until completely melted and use immediately.
Nachos:
- Preheat oven to 350.
- Line a cookie sheet with parchment paper. Add a layer of half of the chips, chicken, cheese, and top with half of the cheese sauce.
- Repeat with the remaining ingredients. Bake until cheese is melted and chips are hot about 10 minutes.
