    How is it June already?! Instead of saying that May was really busy (I’m learning that life is just really busy) I’m just going to say that May was another typical month at our house. We started out May with a 1 and 1/2 week trip to California that began with us driving up highway 1 from LA to SF in a convertible!     We love cheesecake at our house! But I don’t love all of the time involved in baking and chilling! A couple years ago I discovered mini cheesecakes that are baked in a muffin tin and my life was changed for the better.     There are two great things about mini cheesecakes. First is that they are baked and ready to enjoy in a fraction of the time of traditional cheesecake. Read, you can bake and enjoy them in the same day! And second is they are portion controlled!   • Healthier Skillet Chicken Parmesan

      I love meals that are quick and easy to get on the table and dirty as few pans as possible. I also love chicken parmesan, but I don’t love the calories that usually go with it. This recipe isn’t authentic Chicken Parmesan, there is no breading on the chicken, but it does have great flavor from the marinade.  For a weeknight meal, I am happy to save on the extra calories.     To make this recipe even easier, feel free to substitute your favorite jarred marinara sauce for the recipe I have listed below.
