Ingredients
1tablespoonolive oil

1/4cupall-purpose flour

1cupchicken broth
1/2cupshredded parmesan cheese
1package16 ounces gnocchi
2cupschickencooked and diced
1/2 - 1cupfrozen spinachthawed, drained, and chopped.
Instructions
In a large skillet over medium-high heat, heat olive oil.
Add the garlic and cook for 30 seconds. Remove garlic to a small bowl.
Melt butter in the skillet and gradually whisk in the flour until smooth, and cook, whisking constantly for about 3 minutes. Whisk in 1/2 teaspoon salt and 1/4 teaspoon pepper.
Slowly whisk in the milk and chicken broth until the mixture is smooth. Whisk in parmesan cheese and continue cooking for 3-5 minutes until thickened.
Add in the cooked chicken, gnocchi, and spinach. Stir until combined and heated through.
Remove from the heat, top with additional salt, pepper, and some chopped fresh parsley if desired.
Notes
1-2 cups of fresh spinach can be used in place of the frozen spinach.
