Parmesan Crusted Chicken

Ingredients:
  • 2 boneless skinless chicken breasts see notes
  • 1/4 cup Greek yogurt or sour cream
  • 1 teaspoon Italian seasoning
  • 1 tablespoon grated parmesan cheese
  • 1 tablespoon butter melted
  • 1/4 cup panko breadcrumbs
Directions:
  1. Preheat oven to 425.
  2. In a small bowl combine yogurt, Italian seasoning, and parmesan cheese. In a separate bowl, combine the breadcrumbs with the butter until they are coated.

  3. Place chicken on a baking sheet and spread each piece with 1/4 of the yogurt mixture and top with 1/4 of the breadcrumbs.
  4. Bake for 20 minutes, or until cooked through.
Notes:

Slice your chicken in half, so that you have four chicken breasts that are half of the thickness.
