Taco Meat:
1/2poundground beef or ground turkey
1tablespoontaco seasoning
1/4cupwater
Salad:
4-6cupsromaine lettuce washed and chopped
1/2cupblack beansrinsed
1/2cupthawed frozen corn
1/2cupRoma tomatoesdiced
1/2cupshredded cheese
Fresh cilantro
Tortilla Chipscrushed
Dressing:
1/2cupsour cream or Greek yogurt
1-2tablespoonslime juice
Instructions
In a skillet, cook ground beef over medium heat and drain any excess grease. Add taco seasoning and water to the skillet and cook until the water is evaporated.
In a small bowl, mix the sour cream with the lime juice until thin enough to pour over the salad.
