• Healthy Applesauce Oatmeal Muffins

    Do you ever come across recipes that you had completely forgotten about? That’s what happened with this one. I found this recipe again last Saturday morning and it is just as delicious as I remembered. These Healthy Applesauce Oatmeal Muffins are simple, hearty and not overly sweet.     Using old-fashioned oats in these muffins gives them a hearty texture. While the applesauce and brown sugar give them just the right amount of flavor and keeps them moist.     These muffins freeze well and are perfect to pack in lunches.     I think it’s safe to say that I have a slight muffin obsession. But honestly, can you have too many go to muffin recipes? I think not. Last year I went looking for a bran muffin recipe and once I discovered the inspiration for these I stopped looking.
